DOUGH
1 cup butter
2 cups brown sugar
3 well beaten eggs
4 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
FILLING
2 cups dates, cut up
1 cup sugar
1 1/4 cups water
1 cup finely chopped nuts
Mix dough ingredients and blend well.
Chill thoroughly, overnight, if possible.
Cook filling ingredients until they thicken.
Add finely chopped nuts or a package of pean meal to filling.
Cool.
Divide dough into four pieces.
Roll out each piece in a rectangle and spread with 1/4 of the filling.
Roll up like a jelly roll.
Chill 4 hours or overnight.
To bake, slice rolls into 1/8 inch thick cookies.
Place on greased cookie sheet and bake at 374 degrees F for 10 minutes or until golden brown.
Note: These freeze well.
