Risotto

(Rah-ZOTE)
Derived from the Italian word ‘riso,’ risotto is a delectable dish of rice mixed with chicken broth and tomato-based meat sauce

Ingredients

I tablespoon olive or vegetable oil
1 cup rice
3-5 cups chicken broth
3 cups meat sauce
Parmesan cheese to taste

“Grandma Magelli used plain old white rice. Sometimes I use white wine instead of broth. And sometimes I just use cooked minute rice and sauce. It’s not as creamy but it’s still pretty good.”
– Theresa (Magelli) Swanson

DIRECTIONS

Heat the oil in a heavy frying pan.
Add rice and brown.
Once rice is lightly toasted, add 1/2 cup of broth and stir until liquid is absorbed. Repeat this until the rice begins to get soft (but is not fully cooked).

Continue adding meat sauce and broth until rice is soft.
