Fried Chicken

Grandma Magelli’s fried chicken not only predates the KFC and Popeye’s chains, it tastes better. Much beloved second course on Sundays, holidays and when company was coming to dinner.

Ingredients

1 whole chicken, cut into pieces, leave skin on
2 cups flour
2 eggs
Splash of milk
Lard, Crisco, Spry or other oil for frying
Salt and pepper to taste

DIRECTIONS

Salt and pepper the chicken pieces and set aside.
Beat eggs. Add milk.
Heat oil in skillet to 375 degrees F or a little higher.
Dip chicken in egg mixture, then flour,
Fry on each side until golden.
Fry all pieces place in baking pan and if you need a little time before serving, pop the pan into a 300-degree F oven for up to 5 minutes to warm.
