Fried Chicken

Grandma Magelli’s fried chicken not only predates the KFC and Popeye’s chains, it tastes better. It was a much-beloved course on Sundays, holidays and other times when company was coming for dinner.

Ingredients

1 whole chicken, cut into pieces; leave skin on
2 cups flour
2 eggs
Splash of milk
Lard, Crisco, Spry or other oil for frying

“No part of the bird wasted. The liver, gizzard, heart, feet and feathers were all saved and used at different times. Organs were ground up and added to pasta sauce. Feet would be added to a pot brewing broth. Cleaned feathers became pillow stuffing.”

DIRECTIONS

Salt and pepper chicken and set aside.
Beat eggs. Add milk.
Heat oil in skillet to 375 degrees or a little higher.
Dip chicken in egg, then flour.
Fry on each side until golden.
Fry all pieces, place in baking pan and if you need a little time before serving, pop the pan into a 300-degree oven for up to 5 minutes to keep the meat warm.
